My mother has been preparing this dish for several years. Initially I kind of stuck my nose up at it and didn’t try it. Shame on me because I was missing out. Now I can’t get enough of this dish. I’ve made it for myself several times and always eat it all in just a few days. I absolutely love it.
It is a great dish for someone who is a vegetarian or vegan. The black eye peas are a great source of protein. I spoke with some people who felt that the peas would give them gas. I didn’t have that problem but eat in moderation if that is something that you deal with.
This was my first attempt at making it.
I realized that I didn’t like cutting up the tomatoes so the next time that I made this dish I used cherry tomatoes. It was much faster and not as messy to prepare. I also realized that the Margaret Holmes black eye peas that I used were too soft for my liking. I decided to use another brand that had a firmer texture to the peas. Since I enjoy Sesame Ginger salad dressing, I decided to use that the next time I prepared the Black Eye Pea salad.
I preferred this dish with the Italian dressing. The Sesame Ginger version was too much for me.

Ingredients
- 2 cans of black eye peas
- 1 cucumber
- 2 stalks of celery
- 1 tomato
- 1 large bell pepper or 4 small (red, orange, yellow) ones.
- *1 onion
- 1 bottle of Italian Dressing
Instructions
Chop all the vegetables, drain well.
Rinse two cans of black eye peas and drain well.
Place all ingredients in a bowl or casserole dish. Pour the Italian salad dressing over the mixture until covered. Stir everything together and enjoy.
I like this dish cold but my mom prefers hers warm. You can eat it either way.
Notes
*I didn’t put onions in mine because I don’t eat onions that much. This dish keeps longer without the onions. You can add the onion if you want but if you keep this dish for longer than a few days the onion will cause the dish to go bad faster. My mom said that you can just add the onions when you know that you are going to eat it.
