Dear Asparagus, You Have Been Found Delicious!

I’m hooked on asparagus right now. My mother recently turned me on to eating asparagus and eggs. I have finally figured out how to make mine taste almost as good hers. What I was doing wrong is I was using a wide frying pan to cook my asparagus in and then I added the eggs. What was happening is when I was ready to eat it, it seemed like the asparagus was not as tender as when mom cooked hers. So I watched what she was doing compared to what I was doing. I noticed that mom cooked hers in a smaller frying pan and she always had a lid on the asparagus when she wasn’t stirring it. BINGO! I noticed a big difference in the tenderness of my asparagus after I made those changes. The asparagus was so tender and I’ve been eating it several times a week since.

I wanted to try another way that I could prepare the asparagus. Sitting at work, I was imagining the asparagus with a small piece of butter on top wrapped up in aluminum foil in the oven. On the way home I decided to add salmon to my dish. I was looking for the small salmon filets but the grocery store that I went to only had these huge slices in the pack. I decided to get the Smoky Peppercorn Salmon. It was marinated in a garlic and cracked pepper sauce. It was okay but I’m used to very minimal seasoning on my salmon. Salt, pepper, garlic salt, a little lemon juice and I’m good.

Since I’m on a quest to eat cleaner, I thought this was the perfect dinner to add to my beauty foods diet. The salmon has wonderful benefits for your hair, skin and nails. It is packed with protein and omega 3s, a good fat that gives shine to your hair and skin. Generally if a food is good for your hair and skin, it benefits your nails too because your hair, skin and nails are made up of protein/keratin. No, I’m not a nutritionist. I just love to eat things that benefit my hair and skin. I have never had long nails but I can definitely tell a difference in my skin when I eat clean over a long period of time. I have fallen off in the last 6 months and I can tell a difference. Salmon is also suppose to be good for your heart and your brain. It is considered a good fat, like avocados, olives, and peanuts.

The asparagus is packed with good stuff, too. It has folic acid, vitamins A, C, K, B1, B6, thiamin, potassium, and fiber. Since inflammation in the body is thought to be the underlying cause of many diseases, it is best to avoid foods that cause inflammation. Both asparagus and salmon are also anti-inflammatory foods which means that it will be helpful to inflamed or puffy skin. Green salads and other green leafy vegetables are good for taking that puffiness away, too, giving your skin a smoother appearance.

To recreate this dish all you need is some fresh asparagus, a dab of butter or margin, and salmon. I wrapped the asparagus in aluminum foil and put a little butter on top. I followed the directions on the salmon packaging putting it in the oven and cooking for about 25 minutes. I cooked the asparagus for about 20 minutes.
